Coffee farming in Guatemala isn’t for the faint of heart. Or for those who are fearful of heights. The coffee farms known for producing the highest quality coffee tend to be located high in the mountains on the edges of slopes. On one such mountaintop, beyond a forest of oak trees, you’ll find Idolia and Cielito, coffee farms owned and run by the Diaz family for the last 35 years. 

After harvesting coffee cherries at their peak ripeness, the cherries are processed on-site and dried on covered, raised beds. The whole process from picking to washing/fermenting to drying is managed carefully using tools like Brix meters and pH meters.

The family continually develops new processes to increase their coffee quality. Three years ago, they renovated their 25 year-old wet mill, changing all of the conventional metal to stainless steel as well as adding fermentation tanks. Fernando Diaz is also in the midst of testing more than 10 different coffee plant varieties to find the perfect varietals for his farm. 

It’s an honor to work with passionate people like the Diaz family, who we were connected with via Truth Trading Company, an in-country partner who connects small farmers with roasters. We worked with them last year to buy coffee from their founder’s farm, El Milagro, and are happy to be working with them again this year for this delicious coffee from Santa Rosa.
