José Manuel Guevara Rojas owns the 2-hectare coffee farm Finca Los Pozos, which is planted exclusively with the Caturra variety and farmed organically. Ripe coffee cherries are hand picked, depulped the same day, and fermented dry for 18 hours before being washed twice. The beans are dried mechanically over the course of 10–15 days.
